Immortelle
Côtes du Roussillon
100-year-old Syrah, Grenache, Carignan and Mourvedre vines, handpicked and then fermented separately in open top 500l barrels. Hand pigéage through ferment, then pressed into old Château Margaux barrels. The aim is to avoid power and aggression, instead looking for elegance and balance in the wine.
