After six years of working with the ancient vineyards from which we make Immortelle, we realised that there is one that consistently delivers exceptional fruit. Alongside the Bousquet family, we wanted to make an outstanding wine which exhibited this uncommon quality; this was the inspiration for ‘Le Casot’.

An elegant, fruity wine with a savoury finish. The palate is fleshy but with great structure from the inclusion of whole clusters. On the nose, it is captivating with violets, dark berries and delicate spice. It is delicious served with roasted or slow-cooked game meats, as it has a beautiful earthiness with a generous fruit and subtle thyme character. The tannins are chalky and give great length and power.

With the winemaking team at York Winery, we worked together to select the freshest and least ripe Syrah fruit, ageing it in one year old French barrels to give a sense of grip.
