In the southern half of the Languedoc’s Saint Chinian, lies the small village of Creissan. We’ve always admired the wines produced from these soils as they have a suppleness and elegance not normally associated with this part of Mediterranean France. This wine is dry with bright acidity that lifts and delineates the fruit very prettily. Perfumed, dark fruit with the warm smell of sweet baking spices from our use of high quality oak. Being a reflection of the more delicate side of Saint Chinian, means that it pairs well with a wide variety of dishes not just the obvious game or beef. Try it with roast duck or a spicy sausage.
